One of my favorite things to do is find delicious recipes and make them healthier, without sacrificing taste or texture! In my quest for a perfectly portioned sweet treat, I stumbled upon paleOMGs ‘Chocolate Cake in a Mug’ recipe and got to experimenting!
One of my tricks when baking is to substitute unsweetened applesauce for oil. In this recipe, using unsweetened applesauce in place of walnut oil saves you about 230 calories and 14g fat! Applesauce provides such great texture and moisture to any baked goods! Of course, I didn’t get a picture of the applesauce, but here are the rest of the ingredients you’ll need!
I made this delicious dessert a few nights in a row, modifying it a little each time until I came up with the perfect combination! It reminds me of a decadent (and expensive) flourless chocolate cake that’s 1/3 the calories and the price! My final changes included using a little less coconut flour and almond meal, egg white instead of the whole egg, and half of the honey. Since I only used half of the honey, I added 1 tablespoon of coconut almond milk.
Aside from the taste, the best thing about this recipe is how easy it is to make! I like to mix the almond meal, coconut flour, cocoa powder, salt, and cinnamon together. Once those are mixed, I pour them in a mug and add the egg white, honey, coconut milk, and vanilla. Once mixed, just pop it in the microwave for 1 to 1-1/2 minutes, depending on gooeyness preference, and ‘beep beep’ its done. Your kitchen will smell like you’ve been baking for hours!
Directions: place all dry ingredients in a bowl or your serving mug, add wet ingredients and mix with a fork, place in the microwave for 1 to 1-1/2 minutes. Take it out of the microwave (careful, its steamy!!) and add any toppings you desire. Some of my favorites are: coconut ice cream, almond butter, and raspberries. Serve warm, and enjoy!
